I have been hibernating for a while but i think new year calls for a fresh start. I keep on trying different recipes since i have nutrition background. I make sure food is nutritious as well as delicious and easy to digest. Today, i want to share the recipe of phirni ( indian rice custard ) which is delicious and all in family look forward to having it.

phirni - rice pudding
Preparation time : 10 min
Cooking time : 15 min

Ingredients

Milk - 500 ml
Rice - 50 g (soaked and finely ground)
Sugar - 100 g
Saffron - a few strands
Green cardamom - pd. of 2 pods
Rose essence - 2 drops
Almonds - 5-6
Pistachio - 5-6

Method

1. Boil milk in a heavy bottomed pan. Add ground rice paste once the milk starts to boil.
2. Keep stirring continously on low flame till the mixture coats the spoon.
3. Add saffron, cardamom powder & sugar while the mix thickens further on low flame.
4. Remove from heat once the mix coats the spoon and has custard like consistency.
5. Add 2 drops of rose essence.
6. Pour in phirni cups, garnish with almond and pistachio slivers.
7. Refrigerate at least for an hour before serving.

Tips

1. Add rose essence after removing from fire, else phirni will turn bitter.
2. Rice should be finely ground. Coarsely ground rice will take longer to cook and will taste like kheer.
